Ingredients
- 2 natural thick & creamy goats’ milk yoghurts
- 400ml of water
- 2 zucchinis
- 1 small onion
- 1 garlic clove
- Olive oil
- Salt
- A few sprigs of parsley
Preparation
- Wash and dice the zucchinis.
- Put them in a dish, add the garlic clove and olive oil.
- Bake for 15 minutes at 180°C.
- In a saucepan, brown the onion with a drizzle of olive oil.
- Add 2/3 of the grilled zucchinis and the water, simmer for 5 minutes.
- Remove from heat, add the yoghurt and salt. Blend and check the seasoning.
- Serve in a soup plate, add the grilled zucchinis and parsley.
