Ingredients
- 4 sweet potatoes
- 200g of fresh sheep’s milk cheese
- 1 chopped spring onion
- 1 drizzle of olive oil
- Some pink berries
- Salt and pepper
Preparation
- Wash the sweet potatoes.
- Cook in boiling and salted water for 15 minutes.
- Leave to cool.
- Cut the sweet potatoes lengthwise.
- Season with salt and pepper. Incoporate the fresh sheep’s milk cheese.
- Cook the sweet potates in the oven at 180°C for 10 minutes.
- Put on a plate, add the olive oil, the red berries and the spring onion.
- Serve with an endive salad.
