Chestnut cream foam and crispy tuile

For 4 people – Preparation time 30 minutes – Medium


  • 75 g wheat flour
  • 50 g icing sugar
  • 45 g egg white
  • 40 g of sheep’s cream
  • 25 g of crushed almonds


  1. 200 g of sheep’s milk (Vanilla) Greek Style yoghurt
  2. 200g of sheep’s cream
  3. 100 g of chestnut cream

Preparing the crispy tuile

  1. Whisk the egg whites.
  2. In a bowl, blend the flour and sugar, add the cream and the egg whites.
  3. Shape the tiles with a spoon, on a baking tray fitted with a sheet of baking paper, sprinkle the almonds.
  4. Bake in the oven at 180°C until a nice colour is obtained.

Preparing the foam

  1. In a bowl, blend the Greek Style yoghurt, sheep’s cream and chestnut cream.
  2. Pour the mixture in the siphon, add 2 cartridges of gas and set aside in the fridge.


Put a little chestnut cream at the bottom of the glass, siphon the foam and then place a single tuile or a few pieces of tuile.
