Ingredients
- 75 g wheat flour
- 50 g icing sugar
- 45 g egg white
- 40 g of sheep’s cream
- 25 g of crushed almonds
Preparation
- 200 g of sheep’s milk (Vanilla) Greek Style yoghurt
- 200g of sheep’s cream
- 100 g of chestnut cream
Preparing the crispy tuile
- Whisk the egg whites.
- In a bowl, blend the flour and sugar, add the cream and the egg whites.
- Shape the tiles with a spoon, on a baking tray fitted with a sheet of baking paper, sprinkle the almonds.
- Bake in the oven at 180°C until a nice colour is obtained.
Preparing the foam
- In a bowl, blend the Greek Style yoghurt, sheep’s cream and chestnut cream.
- Pour the mixture in the siphon, add 2 cartridges of gas and set aside in the fridge.
Presentation
Put a little chestnut cream at the bottom of the glass, siphon the foam and then place a single tuile or a few pieces of tuile.
