Ingredients for the pie dough
- 100 g of flour
- 60 g of potato starch
- 4 g of salt
- 4 g of sugar
- 85 g butter in pieces
- ½ an egg
- 35 g of water.
Ingredients for the garnish
- 150 g smoked herring
- 1 thinly sliced leek
- 80 g of butter

Preparation of the pie dough
Mix all ingredients in order.
Make a dough and let it rest for a good hour in the refrigerator.

- Sweat the leek in the butter. Add the potatoes. Season and cook over very low heat, covered, for 15 minutes.
- Place the potatoes and herring in the bottom of a fairly high dish and add the quiche mixture. Roll out your dough (2 mm) and place it on your garnish.
- With the handle of a spoon, push the dough down the sides of the dish.
- Brown your pie with an egg yolk mixed with a little water.
- Bake in a hot oven for 30 to 40 minutes at 180°C.
- Serve with a salad of young shoots seasoned with a balsamic vinaigrette and finely chopped shallots.
